Michael Mayta

Michael Mayta is a Miami native who has been a part of the Miami culinary scene over the past 20 years. A graduate of Johnson and Wales, both Miami and Denver campuses, he has worked for Starwood Hotels, Proper Sausage and local chefs Albert Cabrera and Michelle Bernstein.

Michael spent most of his career working for Michelle Bernstein. As an alum of Michy’s, he was later appointed CDC of Cena by Michy. He would then move on to assist with her culinary programs at Sweet Liberty, Cafe la Trova and Michelle Bernstein Catering.

He has expressed his culinary knowledge, with assistance of his wife Keily Vasquez, in projects throughout the years. Illegal Bakery and Dusk helped prepare him to open up USBS at the Citadel in late summer of 2020.

His made from scratch approach to food, along with creativity of menu names and ingredients, has led USBS to attract industry peers, such as Chef Gaston Acurio, BurgerBuff and Action Bronson.

He continues to evolve in the culinary scene with new projects such as Gueritos, which focuses on providing Miami with fresh flour tortillas made of tallow and lard.
