Gianni Lamboy fell in love with food and the art of preparing fresh dishes at a young age through fishing trips with his grandfather in Peru. At the age of 8, he followed his passion to Carpaccio Restaurant, a Miami Italian staple, where he gained invaluable skills working under their longest running chef, Chef Rodrigo Sanchez. Gianni Lamboy fell in love with food and the art of preparing fresh dishes at a young age through fishing trips with his grandfather in Peru. At the age of 8, he followed his passion to Carpaccio Restaurant, a Miami Italian staple, where he gained invaluable skills working under their longest running chef, Chef Rodrigo Sanchez. He continued to master his cooking techniques in a variety of different kitchens, honing his classic French skills in La Goulue, learning the art of Chinese dim sum under Chef Philip Ho of the Setai, and mastering his New American steakhouse approach under Chef Laurent Tourondel of LT Steak. He backpacked throughout Spain and Thailand to acquire new techniques and approaches, ultimately returning to Miami to join the opening team for Jose Andres’ Bazaar Mar in 2016. Gianni found his home at Quality Meats Miami Beach as their Executive Chef in 2017, where he offers hearty, flavorful dishes that enhance elements of a classic butchery.
