Chef Jezhiel Mark Canlas bridges two worlds as Executive Sushi Chef for both Kapow and MINŌ, embodying versatility that few chefs can master. At MINŌ, the intimate 30-seat members-only omakase bar, he presides over the sacred 10-seat counter, channeling shokunin craftsmanship and omotenashi to create seasonal Japanese experiences.
His impressive background includes serving as Chef de Cuisine at Miami Beach’s prestigious Mila Omakase (2022-2025), Head Sushi Chef at Lionfish in Delray Beach (2021-2022), and nearly eight years perfecting his foundation at Aah Loi and Talay Thai in Palm Beach Gardens (2013-2021).
