Pedro Peña and Germán Sitz: the duo behind Thames IS, redefining dining from Buenos Aires to Miami.

The story of Thames IS begins in Buenos Aires, but it’s creative energy has already crossed boarders. Pedro Peña, born in Bogotá 40 years ago, is the driving creative force behind the design and conceptualization of each space. His career began at Tipula under the mentorship of Hernán Gipponi, and he soon joined the opening of the celebrated Florería Atlántico. Restless and ambitious, he co-founded La Carnicería in 2014 with his friend and partner Germán Sitz: a conceptual Argentine grill that broke paradigms in Palermo.

The proposal was disruptive: traditional Argentine cuts presented with modern techniques and an uncompromising approach to traceability, “from farm to plate.” That first restaurant on Thames Street became both a flagship and the foundation of a style that reshaped contemporary Argentine dining.

Meanwhile, Germán, born in La Pampa and raised among cattle fields, brought his direct connection to livestock and raw materials. Trained in fine dining –with experience in Uruguay, Spain and the kitchen of Martín Berasategui– he contributed deep expertise in beef and a fresh vision for reimagining the Argentine grill.

Their next step was even bolder: Niñpo Gordo, Palermo’s most famous Asian-inspired grill. To bring it to life, Pedro traveled for four months across Asia, immersing himself in the kitchens of Japan and Korea. The result was a conceptual, photogenic restaurant where Asian techniques meet Argentine beef. Crossing its iconic red door feels like stepping into a culinary journey beyond borders.
