AMERICAN SMASH BURGERS
Chefs Guillermo Felipe, Carlos Reveron and Daniel Machicao know each other for more than 15 years. When they met, they were just kids in a small high school in Caracas, Venezuela. Now, many years later, they find themselves smashing burgers side by side in some of Miami’s most recognized spots.
Their stories in the kitchen have different origins but converge on the love for food, Carlos worked in a sushi restaurant during college and fell in love with cooking, Guillermo worked for many years in the kitchen, from Italian to French cuisines and Daniel worked American restaurants in both back and front of the house.
Their joint love for food and the industry took them first into food photography and content creation, working together to help restaurants improve their online presence. Taking pictures for restaurants provided a new perspective on the business and finally in September 2022 they decided to start their own pop up food project, incorporating recipes they developed during their years in the industry into a very established American plate, the Smash Burger.
In Cowy Burgers, you’ll find a perfectly crusted Angus Smash Patty on a lightly buttered and toasted Martin’s potato bread. But the thing that defines the flavor of their signature burger is the Bacon Jam which incorporates a pinch of sweetness into the burger, contrasting the flavor of their herbs sauce and the grilled onions. Cowy Burgers focuses on providing consistency on the quality of the burgers and the regularity of their popups, with usually 3 events per week which are always kept up to date on their website and social media.
