Chef Myriam “Mimi” Charles is a South Florida–based, classically trained chef and internationally recognized luxury cake artist with over 30 years of combined culinary experience. A first-generation Haitian-American, Chef Mimi’s passion for the culinary arts was ignited at an early age, inspired by her mother’s preparation of traditional Haitian dishes and pastries. This foundation, paired with formal culinary training, has shaped her signature style—where heritage, technique, and artistry converge.
Chef Mimi received her formal culinary education at Le Cordon Bleu College of Culinary Arts in Atlanta, Georgia, graduating in 2004. She went on to train at the legendary The Greenbrier Resort in West Virginia, a 5 Diamond, 4 Star destination, where she refined her skills under the mentorship of Chef Timmins, CMC, and Chef Richard Rosendale, CMC. In November 2009, she made history as the first African American woman to graduate from The Greenbrier’s prestigious Apprenticeship Program, a milestone achievement that continues to inspire aspiring chefs nationwide.
Driven by creativity and excellence, Chef Mimi founded Lux Cakery, LLC, a luxury custom cake studio known for bespoke, couture cake designs and elevated flavor profiles. Though self-taught in cake artistry, she applies her classical culinary foundation, discipline, integrity, and innovative vision to create edible works of art. Her clientele includes an impressive list of celebrities and public figures such as Dwyane Wade, Udonis Haslem, Teyana Taylor, Winnie Harlow, French Montana, Rick Ross, Amar’e Stoudemire, the Pouncey Brothers, Bobby Lyte, Yo Gotti, 42 Dugg, Vanessa Morgan, Crystal Smith, and many others.
Chef Mimi’s work has received widespread media attention and has been featured in leading national and regional publications, including Essence Magazine, People Magazine, US Weekly, Munaluchi Bride, Aisle Perfect, B Collective Magazine, Radar Online, Miami New Times, Miami Times, Miami Times Online, and Modern Luxury Weddings South Florida, among others.
Her excellence and influence within the culinary and events industries have been recognized through numerous honors. Chef Mimi is a recipient of the 2025 Event Masters Choice Awards – Masterpiece Award, a 2026 nominee for Black Bride Magazine’s Best in Culinary Award, and an inductee into the Monsignor Edward Pace High School Spartan Alumni Hall of Fame. Beyond her professional accolades, Chef Mimi is deeply committed to community engagement and mentorship. She has volunteered with organizations such as Michael Krop High School, Oak Grove Elementary School, Harvard International Charter School, and Hashtag Lunch Bag. She regularly participates in fundraising initiatives supporting other charitable causes and is also a proud contributor to the Monsignor Edward Pace High School Scholarship Fund. Her commitment to service compliments her culinary success, including her winning appearance on Season 2 of the Cooking Channel’s Cake Hunters.
