Mario began working in the restaurant at age 10. As the eldest Vitolo brother, he quickly became a steady presence, not only learning how to cook in the Italian ways, but learnt how to create a warm and inviting atmosphere that makes the restaurant feel alive. He crafted tomato sauce, led the dessert program, perfected tagliatelle, cooked traditional seafood, and mastered the art of the restaurant’s beloved house made foccacia. Out front, he remains the soul of the room: greeting guests with presence, remembering their stories, and setting the tone for unforgettable evenings.

What sets Mario apart is not just skill, it’s style. His hospitality is magnetic, deeply personal, and rooted in a timeless Italian ethos: make people feel seen, fed, and celebrated.

He later honed his craft at the Culinary Institute of America and under legendary restaurateur Dickie Brennan in New Orleans, refining his vision through immersive experiences across Europe, Australia, and Japan. These global influences sharpened his technique, but his foundation has always remained in the legacy of Ballato’s.

Through decades of dedication, Mario has helped shape Ballato’s into a New York institution built on flavor, feeling, and the kind of hospitality that never goes out of style.

At the 2025 New York City Wine & Food Festival, he hosted two sold-out events: a Chef’s Corner lunch and a Capri-inspired James Beard House dinner celebrating southern Italian flavors .

He later honed his skills under New Orleans restaurateur Dickie Brennan and deepened his perspective through time in Europe, Australia, and Japan. Those experiences shaped his precision, but his foundation remains in the soulful cooking and hospitality of Ballato’s.

Today, Mario leads the restaurant with his brother Anthony while overseeing Vitolo in Fort Lauderdale. At the 2025 New York City Wine & Food Festival, he hosted two sold-out events: a Capri-inspired Chef’s Corner lunch and a James Beard House dinner celebrating southern Italian flavors .
