Born in Tenerife in Spain’s Canary Islands, Chef José Diaz sharpened his craft across Europe, cooking in the kitchens of Cracco in Milan and Deanes in Belfast under renowned chefs Carlo Cracco and Michael Deane before heading to London and, ultimately, Miami. A self-proclaimed rebel who first stepped into the kitchen just to do the opposite of what his parents wanted, he quickly fell for the camaraderie, pace, and purpose of the work—no turning back. Now at Pastis Miami with more than 15 years of experience in European cuisine, he brings a disciplined, ingredient-first approach and a commitment to mentoring the next generation of cooks.
