His work reflects the vision of founder and restaurateur Sandro Silva, celebrating the richness, diversity, and cultural heritage of Latin America.
Chef Giancarlo brings extensive expertise to the restaurant’s culinary team. He spent eight years working alongside renowned chef Gaston Acurio in cities including Miami, Chicago, and San Francisco, and has played a key role in opening concepts for 1 Hotels across the United States, from Nashville to New York and San Francisco.
Born and raised in Lima, Peru “Latin America’s culinary capital” Chef Giancarlo is deeply rooted in his country’s gastronomic legacy. His cooking is inspired by cultural diversity and the broader Latin American culinary tradition, which he brings to life through innovative, vibrant dining experiences.
