At 30, Aitor Garate Berasaluze hails from the picturesque Mañaria Valley, where his passion for cooking began in his family’s bakery. At 16, he studied at the Bilbao Higher School of Hoteliers and Restaurateurs while working on the family farm.
Aitor’s journey includes prestigious roles at the 3-star Michelin restaurant Azurmendi and the Ritz-Carlton’s Abama Hotel in Tenerife. He promoted Basque cuisine across Europe with Basking Food and later honed his skills as head sommelier at the renowned Asador Etxebarri.
In 2020, Aitor moved to Miami to become the head chef at LEKU, a Michelin-starred Basque restaurant. After gaining recognition, he opened LUR at the South Beach Food Hall, showcasing his take on Basque cuisine.
Now, he is proud to launch his first brick-and-mortar restaurant, Edan Bistro, in North Miami. This Basque Spanish restaurant offers lunch and dinner, along with a more exclusive 8-course tasting menu available upon request. Edan Bistro also hosts monthly events like wine dinners and chef collaborations, providing guests with a unique culinary experience.
This restaurant marks a significant milestone in Aitor’s career and his passion for bringing the flavors of Spain to Miami.
