Based in the heart of Miami, Ficelle specializes in authentic European-style breads and viennoiseries, made with traditional French techniques and the finest ingredients.
Before launching Ficelle, Olivier Rizk honed his craft in New York City’s competitive culinary scene, where he started off as a baker at Maison kayser and end up leaving as a master baker Awarded best baguette in NYC 2019. His expertise in laminated doughs, fermentation, and product development earned him recognition for innovation and precision in modern French baking.
After relocating to Florida, Olivier brought that same dedication and artistry to Miami — quickly gaining attention for his refined approach to classic techniques. Under his leadership, Ficelle Bakery has become a trusted name among top hotels, cafés, and chefs throughout South Florida.
The bakery has been recognized with multiple awards, including honors for Winning Best baguette in Florida 2022 & 2024 as well as winning best croissant in Florida 2024 from regional culinary competitions and industry organizations.
What began as a small family project has evolved into one of Miami’s most respected wholesale and boutique bakeries. Every loaf, croissant, and pastry embodies Ficelle’s philosophy: bake with heart, honor tradition, and deliver with excellence.
