A sister concept to his renowned Uchi, Uchiko captures the same spirit of creativity and precision while embracing a more playful, fire-driven approach. Every detail — from the sleek, contemporary design to the menu’s balance of tradition and modernity — reflects Cole’s passion for pushing boundaries while honoring Japanese technique.
For this exclusive lunch, Cole joins forces with Diego Oka, the celebrated Executive Chef of La Mar by Gastón Acurio at the Mandarin Oriental, Miami. A Peruvian native and longtime protégé of the legendary Acurio, Oka has earned acclaim for his vibrant interpretation of contemporary Peruvian cuisine — a style that harmoniously blends Japanese technique with Latin American soul. Recognized by the James Beard Foundation and featured in publications such as The New York Times and Food & Wine, Oka’s culinary voice celebrates creativity, balance, and cultural connection.
Together, Cole and Oka present a thoughtfully curated menu featuring pristine sushi and sashimi, wood-grilled specialties, and inventive small plates layered with seasonal ingredients and global influences. Each dish tells a story of flavor, artistry, and evolution — a testament to why Uchiko and La Mar stand among the most celebrated dining destinations in Miami and beyond.

100% of net proceeds from the Festival benefit students of the Chaplin School of Hospitality & Tourism Management at Florida International University who assist Festival organizers in all aspects, including Festival planning, logistics and overall execution.
