Chef Valter Mancini is the Executive Chef at Gianni’s Restaurant at the Villa Casa Casuarina. With more than 25 years of global culinary experience, Chef Valter has re-envisioned the legendary locale’s menu as an authentic, trattoria-style dining experience. Chef Valter oversees all culinary operations at the exclusive boutique hotel including recipe development, menu design, training and food production for the venue’s food and beverage outlets, as well as catering for more than 19,000 square-feet of ultra-luxurious event space.

Chef Valter relocated from Rome to Miami in 2014 to run the kitchen at Sapore di Mare in Coconut Grove. He established his reputation at the small neighborhood restaurant, notable for its authentic Italian dishes, house made pastas and fresh seafood before moving onto Casa Tua. Before that, Valter spent the past 20 years helming kitchens in Singapore, Dubai and the Maldives for Hilton Hotels. His passion for food and interest in the culinary arts was cultivated in formative years spent in both his mother’s and grandmother’s kitchen in Rome, where he learned to prepare pastas from scratch and developed a love of creating dishes with fresh seafood.

Set against the stunning backdrop of the world-famous former Versace Mansion, Chef Valter adds his own imprint to the restaurant’s acclaimed Mediterranean menu; his vibrant cuisine is heavily influenced by the simplicity of honest, Italian cooking..

Pairing perfectly with the restaurant’s elegant ambiance and rich flavor profiles, Valter strives to entice guests with his soulful cuisine; his passion in the kitchen and immense talent offering guests a unique culinary experience. Trained at the prestigious Hotel Management School at the Grand Hotel Palazzo della Fonte, Valter earned his culinary degree in Fiuggi, Italy. He currently resides in Miami Beach, Florida.
