Born in Phoenix, AZ, Chef Todd Erickson quickly developed a love for culinary arts from the strong women in his life. Fun and light nightly meals from his mother. Stick to your ribs farm cuisine from his grandmother Lois, and Mad Men era passed hors d’ oeuvres and dinner parties by his grandma Nancy. All of these experiences primed Todd’s imagination and drive for a chance to attend the Culinary Institute of America, Hyde Park, NY.

After graduating from the esteemed “CIA” in New York, Todd put down roots in Dallas, TX where he was named “Best Chef Under 30” as well as having his first Dallas restaurant make it on the list of multiple “Top 5” lists in its first year. Todd also consulted on two additional restaurant projects in Dallas prior to making the move to Miami, FL with his life partner Joel.
In Miami, Chef Todd quickly became a fixture in the South Florida Culinary scene. His first restaurant Haven earned him praise from all local food critics including Lee Klein, Victoria Pesce Elliott, Laine Doss, Belkys Nerey, Lee Schrager and Ingrid Hoffmann.

Following the momentum of Haven, Todd opened Huahua’s Taqueria just four doors down from Haven. Huahua’s was an instant success due to its delicious fast casual tacos, elotes, queso mac and frosty margaritas. Food Newtork named his Fried Chicken Taco one of the nations 50 greatest tacos. Zagat named it one of the top ten taquerias in the United States.
It is from all of this notoriety that Janette Miller tapped Chef Todd to flesh out her vegan dream project, GLAM Vegan (Green Living Animals Matter). This wouldn’t be Todd’s first foray into vegan cuisine, but it was his first entirely vegan concept. GLAM Vegan helped to put Miami on the national radar for innovative, whole, organic vegan cuisine; so much so that PETA recognized Miami as a top ten vegan city for the first year, the same year that GLAM opened.

Todd is currently the owner of The Todd’s, a Fort Lauderdale based catering and events company as well as a vegan consultant for Anse Chastanet and Jade Mountain resorts in Soufriere, Saint Lucia, the Schwan’s Chef Collective in Minneapolis, Minnesota and GLOW Wynwood, a new not for profit frozen yogurt shop in Wynwood, FL.
