Born and raised in one of the world’s culinary capitals, Paris, France, Chef Stephane was immediately thrust into the realm of cooking. With a family rich in tradition, where the kitchen was the epicenter of the household, Stephane was exposed to the love of food at a young age.
As generations of the family shared recipes, cooked fabulous meals together and enjoyed a common culinary bond around the dinner table, Stephane quickly became interested in what was the social center of his early life.
Not a day passed in which his inquisitive mind did not wonder about the fresh products he saw being prepared, the colors of the local farm vegetables and fruits, and the different sweet smells stemming from pots and pans.
This fascination with the sights and sounds (and tastes) of his family’s kitchen soon inspired him to become a chef.
A source of motivation was the famed toque of Chef Marc Meneau, one of the godfathers of French cuisine.
Chef Meneau’s vision piqued Stephane’s interest during a family reunion at the restaurant and sparked the moment of revelation which inspired him to follow his dream.
Attending culinary school at Lycee Rene Auffray in Paris, Stephane graduated and was quickly recognized for his talent, skills, refined palate and creativity. He was privileged to first join the 4 Star Hotel de Paris, followed by the historically rich Pavillion Henry IV, where he further enhanced his skills as a young chef.
Stephane was quickly recruited as a personal chef for the European aristocratic families Laborde, Martin and Mills, which had him globetrotting to various estates in Florence, Moscow, Dubai and London, to name a few, designing and preparing fabulous meals for dignitaries and socialites alike.
Eventually yearning to return to his restaurant roots, Chef Stephane joined the Costes Hotel and L’Avenue in Paris.

Throughout his years traveling the world, Stephane began to envision himself taking his culinary journey to America to further expand his extensive international experience. Given his talent & reputation, he was recruited by a fellow Frenchman, the CEO of Fisher Island, a private membership community with some of the highest net worth individuals in the world, boasting the most expensive zip code in the Americas.
Stephane took the island by storm and quickly rose to Executive Chef of the Fisher Island culinary empire, now at the helm of seven restaurants and lounges, and even a specialty gourmet market. As A-list celebrities, dignitaries, and the upper crust of the worldly elite, his clientele lines up to request him for private dinners celebrating special occasions.
Chef Stephane firmly believes that the essence of any great dish lies in the quality and freshness of its ingredients. A proponent of farm to table practices and one who has grown many of his own ingredients, he sticks to this principle for his cuisine.
“While I hold true to tradition and also believe in all the incredible new techniques seen in the evolution of cooking, the quality of the ingredients remains my focus…it must be the essence of the dish. It is the heart of a plate and without this, no matter how creative and beautiful a dish may be, it will have no soul,” says Chef Caporal.
Chef Stephane maintains the classic roots of his native country as a foundation for dishes which transcend generations while offering new techniques and presentations to please all senses through passionate and harmonious cooking.
One to never discount new ideas, Chef Stephane has been able to master the flavors of his native France while also embracing many cultures in order to expand his culinary technique with inspirations and practices from all his travels. As one of Miami’s most talented chefs, he has been featured in several noteworthy publications including Fisher Island Magazine, Miami Nuevo Herald, Haute Living Magazine and Executive South Florida Magazine.
Over the years, Chef Caporal has opened his kitchens to many culinary masters, collaborating closely with them as host Chef and cooking alongside the likes of Emeril Lagasse, Daniel Boulud, Eric Frechon, Tyler Florence, Phillipe Chow, and Michael Chiarello.
As Chef Caporal states, “There are no limits to what i do, and i will continue to learn and apply, experiment, try, taste and evolve until i put my knives away, which is not happening anytime soon.
