Sebastian Vargas, Chef and Co-Founder of Grassfed Culture Hospitality
It is said, when you travel far enough, you eventually meet yourself. And so it was with Sebastian Vargas, originally a native of Colombia, who found culinary inspiration while perusing the markets of New Delhi, India. He subsequently enrolled in the Culinary Institute of America and went on to work at some of the best restaurants around the world during the past decade. He has trained under Massimo Bottura (Osteria Francescana), Daniel Humm (Eleven Madison Park) and Magnus Nilssen (Faviken) before it closed its doors. In 2020, he co-founded Grassfed Culture Hospitality which has birthed Miami eateries Krüs Kitchen and Los Felix, both helmed by the singular genius of Chef Vargas, but each with entirely distinct taste experiences.
