In his role, Chef Benitez brings a dynamic and globally inspired approach, overseeing the team at the beloved restaurant. Rooted in traditional asado and open fire cooking techniques, Los Fuegos by Francis Mallmann is known for its bold flavors and authentic South American dining experience.
Growing up in Buenos Aires, Argentina, Chef Benitez’s interest in the culinary arts began at a young age when he would cook Sunday Asados with his father. Chef Benitez studied at the Argentine Institue of Gastronomy, going on to hold various positions around the world including the Hilton hotel in Auckland, Australia and El Celler de Can Roca in Girona, Spain. He eventually returned to Buenos Aires, where he worked as Senior Sous Chef at El Mercado at Faena Hotel Buenos Aires. Chef Benitez relocated to Miami, Florida in September 2015 to join the team at Los Fuegos by Francis Mallmann. In his role as Chef de Cuisine, Chef Benitez oversees the culinary operations for the celebrated restaurant and works to ensure an excellent dining experience for guests and locals alike.
Los Fuegos by Francis Mallmann further establishes Faena Hotel Miami Beach as the city’s premier dining destination and offers an authentic South American dining experience, complete with an outdoor fire kitchen, rooted in the traditional asado. The fire kitchen was custom designed by the renowned chef to fuse his many fire-cooking techniques into one extraordinary kitchen, and it is the first of its kind in an urban environment. The menu features bold flavors that are surprising to the palate while also sophisticated and seductive. Guests will indulge in grilled and roasted meats, as well as fresh seafood and vegetables, all complimented by an exception selection of Argentinean wines and craft cocktails.
