Born in Costa Rica and raised in Miami, Johnson & Wales graduate Reinaldo Alfonso found his passion for cooking at the age of eight when his grandmother taught him the ins and outs of preparing Cuban dishes such as ropa vieja, arroz con pollo, and pudin de pan.

Since then, Chef Reinaldo Alfonso vividly remembers butchering whole chickens and helping to roast pigs. His love of cooking and learning about traditional Cuban foods led him to begin his career.

At 15, Chef Reinaldo Alfonso began an apprenticeship at Miami’s Grove Isle Hotel which led a position at Miami’s Sofitel where he learned about French cuisine. His passion for the style shaped his technique. Working with the culinary team at the renowned Biltmore Hotel further sharpened his culinary skills and he began to experiment with Asian cuisine.

Within a few years, Chef Alfonso left Miami for New York City and began working at Le Bernardin with Chef Eric Ripert.

When Chef Reinaldo’s time in New York City came to an end, he ventured back to Miami and worked at South Florida restaurants such as La Palme d’Or and under Chef Allen Susser and Chef Norman Van Aken. His past experiences led Chef Reinaldo to be Chef de Cuisine at Rothschild’s Tsunami located in West Palm Beach.

Chef Reinaldo’s Asian-inspired style and vast knowledge of seafood led him to move to Tennessee to accept a position as chef de cuisine at Chez Philippe. While working here Chef Reinaldo began to build strong connections with local farmers and even studied the fundamentals of charcuterie. He even revamped Chez Phillipe’s menu and added a Latin influenced approach known as “nuevo southern”.

Chef Reinaldo moved back to Miami and accepted a position as Executive Chef at Alma de Cuba, a STARR restaurant. Since then, he has been named Executive Chef at El Vez Ft. Lauderdale.

In his spare time, Reinaldo enjoys spending time with his three kids, scuba diving and spearfishing. He also has a passion and talent for painting abstract art.
