Qualice Ellington was born in Miami, FL, in 1989. Growing up, she often cooked alongside her grandparents and mother, but it was her grandfather\’s ability to create new dishes that inspired her most. Determined to emulate his creativity, she began her culinary journey at the age of 12. As she matured, her father required her and her siblings to assist with the family business, providing them valuable experience. Her father operated three snack spots and served as a food vendor at Miami\’s top festivals.
In 2017, Qualice established Popo\’s following her brother’s passing. Prior to his death, they explored the idea of becoming tent food vendors, fueled by his desire to open their first restaurant and inspired by Qualice\’s passion for cooking food. To honor her brother, Mark Ellington Jr. , also known as Popo, she chose to name her business in his memory.
Popos LLC is a mobile bistro serving customers between Homestead, FL, and West Palm Beach, FL. We specialize in seafood and chicken, with conch as our signature dish. Our mission is to transport your taste buds to the Bahamas while adding a Miami twist. Our diverse menu caters to various tastes, and we take pride in preparing food without cutting corners. Our passion for cooking distinguishes us from competitors. We have showcased our culinary skills at prominent festivals such as Jazz in the Gardens, the Miami Gardens Juneteenth Celebration, the Deering Estate Seafood Festival, the Homestead Seafood Festival, Jazz In The Heights, The Essence Festival, Karaoke in the Gardens, and many others. Today, I am proud to announce that we have evolved from being a tent vendor to operating two mobile bistros and one stationary unit at Nomi Village.
