Paul Qui is the Chef at Pao by Paul Qui and El Secreto Omakase at Faena Hotel Miami Beach. Drawing from a range of international styles including Filipino, Spanish, Japanese & French, Pao boldly presents a new brand of modern Asian cuisine with stunning ocean views. With only six seats and two seating’s per night, El Secreto Omakase offers an unparalleled tasting menu blending Tokyo-style sushi and Kyoto-style kaiseki.
Born in Manila, Philippines and trained in classic French and Japanese cuisine, Qui takes a modernist approach towards food that’s delicious and authentic, yet playful and unexpected. A master at marrying classical technique with local flavors, Qui draws inspiration from Filipino, Japanese, Spanish, and French culinary styles. Paul is co-owner of Houston-based restaurant group FAM Hospitality, which includes Neo-Fjordic meets Gulf Coast seafood concept Golfstrommen, named the #1 restaurant in Houston by the Houston Chronicle, among others.
Chef Qui rocketed the ranks to culinary stardom after winning Top Chef followed up by a James Beard Award for Best Chef: Southwest. Notably, Tom Colicchio, a distinguished judge on Top Chef, hailed Chef Qui as the most exceptionally gifted chef in the history of the show, a testament to his extraordinary talent and innovation in the kitchen. In 2014, Esquire named him Chef of the Year, and Food & Wine recognized him as one of their Best New Chefs and a Top 10 Empire Builder in 2012. He also claimed victory at the 2013 San Pellegrino Cooking Cup. His culinary achievements earned him recognition from the Texas Legislature and a spot on the prestigious ment’or BKB Foundation Culinary Council (formerly Bocuse d’Or USA). Chef Qui’s journey is a testament to his exceptional talent and contributions to the culinary world.
