Pablo Guarella, Chef Partner at Fleming’s Prime Steakhouse and Wine Bar in Coral Gables, has deep roots in Argentina, and was practically born with a passion for steak. The son of restauranteurs, Pablo looks back with pride on the times his father asked him to takeover for him in the kitchen. Constantly at the culinary forefront, Pablo was one of the first graduates of the Instituto Gastronomico de Letty Gordonin Mexico City, after which he took his signature style around the western hemisphere, from Argentina to Mexico and from Los Angeles to Minnesota and now, South Beach. At Fleming’s for the past six years, Chef Pablo strives to give guests the deliciously soulful feeling of home with his cooking. Seldom far from his kitchen, he stays on the lookout for local ingredients that he turns into amazing dishes, incorporating locally-caught seafood such as hogfish, grouper and red snapper, as well as tropical fruits and vegetables from nearby farms, like guava and avocados. Chef Pablo is excited about participating in the South Beach Wine & Food Festival and especially enjoys the opportunity to collaborate with fellow chefs, share his knowledge and experience the diversity of the local culinary scene.
