Born and raised in Athens, Greece, Nikolaos Georgousis graduated from the Culinary Institute in Greece and started his career at the famed five-star Divani Caravel Hotel in Athens. In 2000, he joined the five-star Caldera Beach Resort on the Island of Crete, where he served as the Executive Sous Chef at Caracas Restaurant.

Finding himself crossing the Atlantic and over to the United States in 2008, Georgousis joined forces with his best friend Girair ‘Jerry’ Goumroian at his family’s casual Greek restaurant. As chef of the local hotspot located minutes from the famed Las Vegas strip, for years the two worked together serving classic Greek cuisine while making use of traditional ingredient in fresh ways.

In 2010, Georgousis joined one of the finest Mediterranean seafood restaurants in the world, Estiatorio Milos at The Cosmopolitan Hotel and Casino in Las Vegas. Working his way up the executive culinary ladder, he played an integral role in the brand’s expansion, overseeing the opening of its Miami location in 2012 and London location in 2015.

Coming back full circle, Georgousis joined Goumroian in February 2017 in opening Meráki Greek Grill in Las Vegas. As Executive Chef and Partner, the two found themselves continuing to explore the richness and splendor of grill dishes; from classic gyros to signature bowls, the establishment soon became a popular restaurant for guests to experience casual Greek dishes with that make you feel like you’re on a Mediterranean island hoping vacation. The dynamic duo and fast-casual establishment continue to leave a mark on the Hellenic community, now with a wave of menu items that push the boundaries.

Bringing their talents and partnership to the East Coast, this September 2020 their collective and newest venture is with the award-winning MINA Group, introducing its first Greek concept to South Florida, Ornos Estiatorio. The 160-seat neighborhood restaurant brings to life the sensory pleasures of a trip to the Greek Isles – the delectable fresh fish, meats and vegetables beloved Mediterranean specialties cooked in a wood fire grill, and genuine Greek hospitality – in an approachable, friendly environment everyone can enjoy. Ornos Estiatorio sits in Aventura Mall’s new outdoor oasis and allows guests to escape to Greece with a laidback ambiance, where they can put their elbows on the table, dip their bread in the fresh olive oil, dance along and laugh out loud with family and friends.
