Mikel is known as one of the foremost chefs in the Basque country and his love for the art of gastronomy is electric. Goikolea’s path began at Restaurante Las Rejas located in Las Pedroñeras (Cuenca), a kitchen directed by the great Chef Manolo de la Osa, who possesses one star in the Michelin Guide.  Later, Goikolea got an internship under the guidance of celebrated chef Eneko Atxa and climbed the kitchen ranks at the Michelin three-star restaurant, Azurmendi, in Vizcaya Spain. In 2014 Goikolea was named Executive Chef of Azurmendi Prêt à Porter until he moved to Miami in 2017 and joined forces with internationally renowned Le Basque Catering, a full-service catering and event design company in South Florida, as its Consulting Chef. With the opening of LEKU, the 30-year-old Goikolea promises to honor his heritage and share his knowledge and deep understanding of the traditions of Basque cooking with guests in Miami.
