Gianluca’s quest for culinary perfection is his inspiration and the force behind his continued success. “There’s no feeling more rewarding than creating a dish with rare flavors that perfectly complement each other and dance together across the plate,” insists Gianluca. “Our menu at La Moderna is unique because we honor classic Italian recipes but add a modern twist. I love to experiment with rich flavors that captivate the palate.”

As a Puglia-born chef who learned how to cook from his nonna at the young age of six, Gianluca’s traditional Italian roots run deep. As a child, he spent every Sunday inside the house cooking a variety of Italian dishes including homemade Cavatelli al Ragu.

In hopes of pursuing his passion professionally, Gianluca enrolled in Rome’s renown Gambero Rosso culinary school known as “Italy’s slow food institution” where he learned from esteemed
Michelin-starred instructors.

Upon completing his studies at Gambero Rosso, Gianluca became Chef of Rome’s La Moderna restaurant, situated in the city’s Testaccio neighborhood known for its delightfully packed restaurants. After successfully helming the kitchen for four years, Gianluca set out for the United States.

In January 2017, he officially joined La Moderna’s sister restaurant in Miami, nestled in the vibrant South Beach neighborhood of Sunset Harbour. Here, he works his culinary magic designing a unique menu featuring dishes from the various regions of Italy from Milan in the North to the Southern peninsula of Sicily.

As one of the youngest chefs in Miami’s bustling foodie scene, 26-year-old Gianluca has quickly secured La Moderna’s place within the city’s hot culinary scene.
