Born in 1994 in Senigallia, a charming town on the Adriatic coast in Italy’s Marche region, Mattia Fontana has been the Junior Sous Chef at Il Sereno al Lago (1* Michelin Star) within the 5*L Il Sereno Hotel in Torno (CO) since 2022.
Since my first day at Il Sereno al Lago, the philosophy of Chef Raffaele Lenzi has been a profound source of inspiration for me, pushing me to create new culinary experiences and constantly challenge myself to achieve the highest standards of quality.
Mattia’s culinary journey began in 2012, directly in the world of luxury hospitality, with an internship at Villa Feltrinelli 5*L under the guidance of Chef Stefano Baiocco. This foundational experience sparked his passion for exploring global cuisine.
In pursuit of this dream, he moved to the USA, joining the Hyatt Regency 4S in Houston as a kitchen commis. His career then took him to the Middle East, where he advanced to Chef de Partie at the Park Hyatt Abu Dhabi 5L.
In 2016, Mattia returned to Italy to work at the 5*L Hotel Castadiva (now the Mandarin Oriental Lake Como), where he quickly rose to the position of Junior Sous Chef. His passion for international experiences later brought him to Australia’s East Coast, where he worked at the renowned Palazzo Versace in Gold Coast.
In 2020, Mattia joined the team at Il Sereno, initially working under Chef Raffaele Lenzi at Le Sereno in Saint Barthélemy. His dedication and expertise quickly earned the Chef\’s trust, leading to his current role on the shores of Lake Como. Today, Mattia is a cornerstone of the kitchen team, where his international experience and partnership with Andrea Rubano make him a trusted collaborator of Chef Lenzi.
