Chef Marty was raised about 30 miles west of the city of Chicago where his love for diversity of flavor and cuisine truly began. He grew up eating Italian beef sandwiches, deep dish pizza, and tacos from the local tortilleria owned by the family that later taught him how to make the best salsa and huevos rancheros.

Marty received his culinary education at the French Culinary Institute in Campbell, CA before opening his first restaurant, Chef & the Butcher, in the suburbs of San Francisco. A BBQ & Butcher shop concept that combined Texas style BBQ with quality local meat. He traveled the country in search of the best BBQ and in doing so he landed in, of course, the city of Austin. Here, obviously the BBQ shined but it was the TexMex that stole his heart.

From there, he started a digital marketing agency focusing on helping local restaurants drive new and repeat traffic among customers using their social media, photography and videography. Although he created a successful business through the years, Covid caused most of his clients to cut their marketing costs and his company was forced to shut down. He saw this as a new opportunity to open his own little food business and build something new from the ground up.

Poblano South is a TexMex food stand with its signature dish being the RIZO smash burger – its patty is made from chorizo, brisket and chuck topped with caramelized onions, B&B pickles, dijonaise, and bacon on a gochujang buttered potato bun. Other menu items include a pecan smoked chicken salad sandwich, a poblano & gouda grilled cheese, and a breakfast sandwich with poblano cream cheese, egg, American cheese and bacon on a toasted ciabatta.

Poblano South strives to bring quality fast casual food options to consumers, in hopes of creating a more prominent TexMex food scene throughout the state of Florida
