Born at the intersection of passion project and pandemic pivot, Mo’s Bundt Cakes has officially begun shipping a selection of golden bundt cakes draped with rich flavors such as Nutella, Dulce De Leche and their signature Cinnamon Cake to Miami and beyond. Just in time for the holidays, customers can choose from an assortment of sizes, flavors and presentations – all packaged to maintain optimal freshness and made available for nationwide shipping from it’s Miami-based ghost kitchen. Mariolga Calderon, owner and Chief Creative Baker, brings Mo’s Bundt Cakes to life with her return to the kitchen after working as a marketing director in
corporate America for over a decade. Twelve years ago, Calderon opened a brick-and-mortar bakery inspired by the rave reviews of her bundt cakes from
friends whom she often entertained in her home. With a daughter who was six years old at the time and a P&L reflecting sky-high overhead costs, she decided to close up shop and stabilize her course with a more reliable 9-to-5 corporate job.
Now, with a magnitude of marketing experience in her arsenal and the economy’s opportune shift to a delivery-driven marketplace, Calderon decided it was time to revisit her bakery endeavor with a new business model in mind. Finding a space in 2020’s virtual boom, Mo’s Bundt Cakes operates as an online-only bakery, utilizing a ghost kitchen based out of [neighborhood] as a hub for creating its decadent confections.
“When I first started, people weren’t used to shopping via social media,” Calderon said. “Now there is so much more access to our audience. It’s been the perfect time to revisit this venture because I’ve been able to really focus on our brand and create an experience even through the delivery process.” Mo’s Bundt Cakes are available in a Medium 8” (from $27) or Large 10” (from $37), in Mo’s Mixed Box as an assortment of four 4” personal cakes (from $20) or in Mo’s Jar Cakes stacked in threes and packaged in mini mason jars (from $36). Prior to delivery, the cakes are shrink wrapped in air-tight packaging to retain moisture and then boxed in a playfully branded parcel before being transported. Because the brand is based on a delivery only model, recipients are in for a treat before even sinking their teeth into these delightful sweets. The entire unboxing process is meant to be enjoyed as part of the experience, and inside customers will find catchy quips introducing each flavor
along with DIY icing bottles inviting them to participate in the finishing process before indulging. While the charming presentation is the brainchild of Calderon’s marketing prowess, it’s the bundt cake recipes that are considered the beating heart of the brand. Calderon’s recipes originated with her Puerto Rican grandmother who passed them down to Calderon’s mother; she remembers always being surrounded by the joy and warmth of home-baked goods.
“Believe it or not, I’m not a sweets person, but I come from a family of bakers and to this day, if you go to mom’s house you’ll always find lemon bars, brownies, or of course, bundt cakes,” Calderon said. “These recipes have been passed down through the women in my family for years and I’m putting my mark on them to make bundt cakes cool for this generation! More than anything, I want to give the gift of joy this year because I’ve always associated these cakes with happiness.” Calderon’s signature Cinnamon Cake is the one that started it all – the perfect companion for morning coffee or after dinner, it entices gourmands with a smooth sweetness of cinnamon ribbons running through a buttery moist cake finished with a drizzle of indulgent vanilla glaze. Dulce de Leche, Guava, Nutella and Cinnamon Rum round out the selection of year-round favorites with a rotation of flavors such as Butterfingers or Red Velvet making seasonal appearances. At the top of the New Year, Mo’s Bundt Cakes plans to introduce gluten-free and low-sugar cakes for those with dietary restrictions.
