Fontainebleau Miami Beach is announcing the appointment of Chef Laurent Branlard as its new Executive Pastry Chef. Classically educated in France and with over 25 years of hospitality and culinary experience, Branlard is a welcome addition to the resort. Branlard has a proven track record of excellence and as Executive Pastry Chef, Branlard will manage and oversee all pastry operations, including the hotel’s acclaimed patisserie Chez Bon Bon, banquets and special events and the hotel’s VIP amenities initiatives.
In 2002, Branlard became Complex Executive Pastry Chef at Walt Disney World Swan & Dolphin Resort in Orlando, Florida. During his 19 years there, Branlard managed all aspects of the Hotel’s pastry and bakery kitchen operations while leading a team of 30 artisans at two properties. Branlard created show stopping sugar and chocolate displays for the property, so grand they were highlighted on CBS, Food Network and NBC. He also received top accolades such as “World Pastry Champion” with team USA in 2002 and 2008. In 2021, he founded Laurent Branlard Consulting, an agency that engages with clients to craft a vision for projects such as dessert menu development, pastry manufacturing facility and more.
