With more than four decades of experience and a background in French cuisine, Chef Kal keeps balance at the forefront of every recipe by ensuring the chemistry of each ingredient meshes perfectly together to create an impeccable palatable flavor profile. “Chemistry is always key, my goal is to be simple with my ingredients and make sure everything comes together perfectly for a better taste and clean flavors,” said Chef Kal. “Combining this concept with the freshest, highest quality product available, I am truly able to bring something special to the table.” Previously the executive chef at The Forge for 20 years, he has accumulated multiple awards for his work, including DIRONA awards, Wine Spectator’s “Best Steak in America,” and the Miami chapter of Chaine des Rotisseurs’ “Best Restaurant of the Year” award. He also had the honor of preparing dinner for both of Ronald Reagan’s inaugural galas. Aside from this, Chef Kal collaborates with local schools and causes in the South Florida area, like Johnson & Wales
University’s ‘The Distinguished Visiting Chef’ series. His most recent accolade comes from his peers in the culinary industry, who have voted him among the “Best Chefs America” for three consecutive years. Under his leadership for almost seven years now, A Fish Called Avalon has continuously been recognized for its outstanding dining experience. During his free time, Chef Kal enjoys dabbling in art and different sports. When not creating oil paintings or wood crafting, he can be found playing tennis, basketball and golf.
