Originally from Guatemala, Jose grew up around food his whole life. His family comes from a hospitality background centered in tourism in the north of Guatemala. From a very young age he took interest in the different types of cuisine his country had to offer and started learning in the most familiar environment he could, his grandma’s kitchen. Originally from Guatemala, Jose grew up around food his whole life. His family comes from a hospitality background centered in tourism in the north of Guatemala. From a very young age he took interest in the different types of cuisine his country had to offer and started learning in the most familiar environment he could, his grandma’s kitchen. Jose’s grandmother, Marina, was a firm believer that the only acceptable way to make something is from scratch. He experience how tamales where made by drying the corn themselves and later grounding the kernels by hand with a stone, a 3 day process to make one dish. Fascinated by the process of cooking he went on experimenting by himself and researching how different types of food were made. He always took cooking as a hobby he was very passionate about, but a hobby nonetheless.

He went on to graduate college with a double major in Economics and Psychology, continuing his passion for cooking on the side. Later on his business partner and friend, came to him with the idea of a Fast-Casual Mediterranean restaurant with high quality food. Together they developed the idea for Taula. The concept was focus on being able to deliver high quality food at an affordable price. His grandmother’s influence in the kitchen of making everything from scratch is one of the main values of the restaurant. Using simple ingredients and advance techniques to create powerful flavors has made the restaurant stand out from other similar concepts.
