Born in Western New York and raised in Puerto Rico, Chef Jorge Negron developed his passion for cooking from his father – also a chef – and grandfather who taught him to cook Puerto Rican dishes at home. Surrounded by generations of culinary talent, he was inspired to attend culinary school at La Universidad Interamericana de Puerto Rico. From there, Chef Negron worked in many notable kitchens including The St. Regis Bahia Beach Resort in Puerto Rico, The Ritz-Carlton, South Beach, 1 Hotel South Beach, and Geoffrey Zakarian’s Point Royal and Counter Point in Miami. Currently serving as Executive Chef of the newly opened Traymore by Michael Schwartz at COMO Metropolitan Miami Beach, Negron brings together fresh Floridian flavors with bright, Southeast Asian influences under the guidance of Chef Michael Schwartz. Using fresh ingredients, the menu remains a reflection of COMO’s 20-year commitment to healthy yet flavorful cooking.
