Jonathan Andrade is the grandson of the late Raul Garcia, owner of Islas Canarias Restaurant and the original creator of the recipe for Islas Canarias Croquetas. The secret family recipe was passed down to Andrade who has been making croquetas for over 10 years and now runs the top secret facility where Miami’s favorite croquetas are made. Andrade grew up in a family of restauranteurs and followed the same successful path along with his sister, Eileen Andrade, where they opened their first business the CUBANCUBE Food Truck in 2011, followed by the successful West Kendall gem, FINKA Table & Tap in 2014.

Now the “Croqueta Master” of Miami, Andrade maintains the integrity of the original recipe while catering to more adventurous eaters by creating curious combinations of flavors like Serrano Ham with Manchego Cheese, Buffalo Cauliflower and Jambalaya Shrimp, to name a few. In 2017, Andrade won “Best Croqueta” at the SOBE Wine and Food Festival for his creation of Kimchee Mojo Pork and Crab Mac & Cheese Croquetas. Jonathan’s vision has allowed him to cultivate a community around the nation that knows and loves Islas Canarias Croquetas, thus, creating the brand “Croqueta County” in 2020 which is a media and merchandise outlet for fans of this famous croqueta.  “It’s always about the family,” says Andrade, who has taken his family’s recipe to the top and continues to work on projects for the future that will make his family’s legacy proud.
