Chef Jason Glus, a Chicago native and military veteran, has spent his career blending his passion for food with his dedication to excellence. Drawing early inspiration from the legendary Chef Emeril Lagasse, Glus honed his culinary skills at The California Culinary Academy, where he set the foundation for a successful career in the kitchen.
After graduating, Chef Glus quickly made a name for himself, launching a catering business that served Hollywood’s elite, including clients like Pixar Films. His talents took him to Napa Valley, where he worked as a personal Chef for music icon Carlos Santana before landing an externship at the renowned French Laundry under the guidance of Chef Thomas Keller. This experience further shaped Glus\’s approach to fine dining and elevated his culinary expertise.
Chef Glus\’s notable professional leap came when he became the youngest-ever Executive Chef for his culinary inspiration at Emeril’s Orlando, located at Universal Studios. His success there led to a role as the Executive Chef at Islands of Adventure, and eventually, he was named the Executive Chef Parks for all of Universal Parks in Tampa, overseeing multiple high-volume kitchens and a wide range of culinary operations.
Today, Chef Glus brings his wealth of experience and leadership to Gulfstream Park in Hallandale, Florida, where he continues to inspire and delight guests with his creativity and commitment to excellence.
With a deep respect for seasonality and sustainability, Glus creates dishes highlighting fresh, local ingredients while focusing on balanced flavors. His meticulous approach to organization and efficiency ensures that he can seamlessly prepare meals for large groups while maintaining the high standards he’s known for. Chef Glus\’s specialties include his famous Chicken Scallopini and 24-hour brined chicken wings, both of which have become fan favorites among his many loyal guests.
