Born in Cartagena, Colombia, one of the most touristic and diverse city of Colombia, Jairo grew surrounded by a mix of flavors and cultures from different places, being exposed to that food, drinks and ambience became a passion in his blood.
At age of 17 he moves to Bogota, Colombia where he work as a waiter, bartender and later on as a manager for a restaurant bar where he got the experience working with staff, clients and service. After obtaining a college degree in Industrial Design in his native country, he moved to New York where he earned a degree in Advertising and Graphics Design, while doing that he was working as a waiter. Working in a couple of places, he got the experience and knowledge of trendy food, drinks and restaurant ambience.
He came for vacation once to Miami where he found a growing city with an interesting mix of people, he got the opportunity of buying a restaurant business and open “Bolivar” a mix of Colombian and South American dishes and drink recipes, combined with a festive ambience, a place for celebration and enjoy unique food. Jairo is a believer of getting traditional flavors and mixed them with new ingredients creating a unique flavor and presentation without losing its essence.
