Chef de Cuisine, Gianluca Messano, found his deep love and passion for cooking at a young age in Puglia, in a household whose culinary character was defined by his families’ Italian and Mediterranean roots. As early as five years old, Messano spent much of his time in the kitchen cooking by his grandmother’s side. As he grew older, his culinary passion only grew stronger, and eventually Messano enrolled himself in the prestigious Gambero Rosso culinary school of Rome where he would spend the next one and a half years cooking from morning to night and learning new techniques.

Upon graduating, Messano took his first job working in the kitchen of 2-star Michelin restaurant Pascucci al Porticcioli in Rome where he acquired tremendous knowledge and experience. After one year, he received a job offer to participate in opening a new fine-dining restaurant in Rome called Splendor Parthenopes, where he would do close to 600 covers a day for the next four years. When the owners of this restaurant decided to bring their concept to Miami at La Moderna, Messano packed his bags and came along to America. In the next three years working as a Chef at La Moderna, Messano has also participated in many catering opportunities, food festivals, and private events and was honored to receive the award for “one of the best Chef’s in Florida” by Gambero Rosso most recently.

When the global pandemic COVID-19 occurred in 2020, causing many great restaurants and Chef’s to reevaluate and pivot, Messano found himself switching gears and finding home at Motek in downtown Miami, a Mediterranean gem located inside the historic Seybold building. Messano has been with Motek since inception, working his way from the pantry to his current role as Chef de Cuisine. Messano is looking forward to growing with Motek and bringing his love for Mediterranean cooking to Miami.
