Eric Do is Executive Chef of Blue Matisse Restaurant and NAU Lounge at the InterContinental at Doral Miami. He is an award-winning chef and member of the Miami HEAT Celebrity Chef Program, who has made his mark on the South Florida restaurant scene.

Eric Do is Executive Chef of Blue Matisse Restaurant and NAU Lounge at the InterContinental at Doral Miami. He is an award-winning chef and member of the Miami HEAT Celebrity Chef Program, who has made his mark on the South Florida restaurant scene.

He develops new creative and inspiring menus for the On-the-Fly Executive Lunch Buffet and a la carte dinner. His most recent creation includes a rotation of different international dishes featured daily and updated each month.

Chef Do gives credit to his multi-cultural staff who inspire the menu by bringing recipes of their favorite dishes from their native countries. And of course, he includes his personal Asian, Korean and west coast flair to the menu.

“My goal is to create a menu that goes above and beyond with a chance for everyone to savor different dishes and flavors,” says Chef Do.

Encouraged by his grandmother’s passion for food and cooking, he earned his degree in culinary arts at The Art Institute of San Diego.

Some of his most recent accolades and awards are: 2016 SOBE Seafood Fest Battle Tuna Champion, hosted multiple Guest Chef Events at Dewar’s Lounge in AAA Arena, and co-hosted media lunch for the Global Intercontinental Hotel Brand at the Chefs Club in New York.
