Born and raised in Aibonito, Puerto Rico. Emanuel has been cooking ever since he was a little kid. This is due to his grandparents being cooks and restaurant owners. He studied Culinary Arts at the Bank and Commerce Institute (IBC for its Spanish acronym). He won the Goya Award for Best Chef on two occasions.

Even though he received these accolades he didn’t visualized himself with a career as a Chef. Therefore, he started working as a Waiter on Aviones Restaurant in Barranquitas, Puerto Rico. One day, the restaurants Chef was absent, and he had to fill in for him. From there on, he started working as a cook until the restaurants closure. When he got to the US, he worked for Emilio Estefan until the opportunity of co-owning and being Executive Chef at 100×35 in Miami Beach.

This has been a surreal experience for him because it’s the first fine dining Puerto Rican restaurant to exist, therefore it’s visited by several Puerto Rican celebrities like: Gilberto Santarosa, Guaynaa, Nicky Jam, Maripily, etc.

Chef Jimenez honors Puerto Rico’s multiculture thought his dishes. From the traditional mofongo to sancocho, all these plates serve has an homage to the cultural and flavor that define Puerto Rican roots with a sophisticated approach but with the authentic Boricua flavor.
