To Chef Eduardo Lara, the taco is more than just a midnight meal; it is a lifelong obsession. Chef Eduardo was born in Mexico City. He’s been living in Miami for 19 years, visiting Mexico at least once a year. Through his limited trips he developed a longing for the sensation of eating a fresh taco on the street corner. At 15 years old, committed to authenticity, he brought with him from Mexico a “trompo” and a hand crank “tortilladora”; thus starting his journey in the culinary world. He officially started his professional career at La Pollita as a cook. He went on to work for several other Miami chefs and flourishing restaurateurs, most notably Chef Omar Montero, Chef Raheem Sealy, and David Foulquier (Fooq’s). Hungry to exceed the expectations of his past and present mentors, Chef Eduardo looks to bring his brand of fresh, affordable, irresistible street tacos to the Miami food scene.
