Chef Aguilera has nearly a decade of culinary experience and has been with the Biltmore Hotel for the past year. He is currently in charge of all the hotel culinary operations. He oversees seven of the hotel’s culinary outlets, including, The Biltmore’s Cascade, 19th Hole, Fontana, in addition to the hotel’s culinary operations and the famous Sunday Brunch. Chef Aguilera also creates all menu preparation for the hotel’s outlets while overseeing execution and logistics to increase productivity and successful hotel operations. In addition, he is a key contributor and creator of the hotel’s signature recipes. Most recently, he created the Chef’s Table Series at The Biltmore, which consists of a six-course menu comprised of a Burrata Salad, Mediterranean Shrimp, Beef Carpaccio, Champagne Berry Gellee, fresh Tagliolini, and Seared Sea Bass with Potato Leek Hash, Lobster Bisque, Caviar and Fennel Dill Oil Sauce and a decadent sampler dessert including mousse, Flourless cake, and Tiramisu Macaroons.

Before joining The Biltmore, he served as Executive Sous Chef at The National hotel. In addition, he was in charge of all culinary operations for the historic Art Deco hotel in Miami Beach. He is also the former Corporate Executive Chef at Clutch Burger in Coral Gables, an upscale restaurant specializing in curating an array of burgers with distinct themes and flavors. His career history also includes having a chef position at popular hotel establishments such as Turnberry Isle Resort, the well-renowned country club in Aventura, where he worked under celebrity chef Scott Conant.

Chef Aguilera is from New York City and grew up in Miami, which provides much influence and inspiration to create his colorfully infused savory dishes.
