Camilo Blanco

Born and raised in Miami, only three blocks away from Miracle Mile. Attended Coral Gables High then Johnson & Wales, graduating in 2010. Began working in the restaurant industry around 2007, under the mentoring of Giorgio Rapicavoli of Eating House. Bounced around a few places like the Angler’s Hotel (with Giorgio) on Washington Ave, Josh’s Deli up in Surfside, and even worked Catering at Le Basque for a couple of years. Bounced around a few places like the Angler’s Hotel (with Giorgio) on Washington Ave, Josh’s Deli up in Surfside, and even worked Catering at Le Basque for a couple of years. He opened Eating House together with Giorgio Rapicavoli and worked there for about two years. Until around 2013, he started working at Mandolin Agean Bistro where he worked his way up to Executive Chef. After Mandolin, he went on to open B Bistro in Brickell under Henry Hane. Worked there for about two years on and off doing catering also on the side until meeting the team behind Plomo Taco Bar. Today he is the Executive Chef for all Atomic Group concepts: Copper 29, Plomo Taco Bar & Crema Gourmet Espresso Bar.
