Benjamin Murray is the Chef De Cuisine at Pao at Faena Hotel Miami Beach. In his role, Chef Murray brings a dynamic and globally inspired approach, overseeing the team at the renowned restaurant. Featuring a selection of modern Asian dishes reflecting a range of international influences and flavors, Pao has earned a reputation as one of the most exceptional dining experiences in the country.

Chef Murray’s interest in the culinary arts began at a young age when his mother introduced him to both the flavors of her native Japan, while he simultaneously learned traditional American cuisine from his father. He developed a deep appreciation for diverse ingredients early on, which heavily influenced his creative gastronomic vision. Chef Murray studied the culinary arts at Johnson & Wales University, going on to hold various positions across the country, including the Fairmont in Scottsdale and the Eliot Hotel in Boston. He eventually relocated to Miami, where he worked as a Sous Chef at Zuma and Area 31. Most recently, Chef Murray served as the Chef de Cuisine at Azul at the Mandarin Oriental.

Chef Murray is recognized as one of the most exciting chefs in Miami. Under his direction, Azul was one of only two restaurants in Florida to receive the highly coveted Forbes 5 Star rating, and he was additionally named as a featured chef at South Beach Wine & Food Festival’s Best of the Best.

Pao further establishes Faena Hotel Miami Beach as the city’s premier dining destinations and offers an extensive menu with wide-ranging inspirations and international styles including Filipino, Japanese and French. The menu showcases exceptional flavor combinations and ingredients, and features a range of innovative cooking techniques and creative cocktails. Designed by Alan Faena, the restaurant is located in The Dome, which is a highly modern sphere with ocean views overlocking the courtyard of the hotel. The interior of the restaurant boasts gold-leaf walls and a patterned gold-leaf design on the domed ceiling, while Damien Hirst’s Golden Myth, a pained gold-leaf unicorn sculpture is located at the center of the restaurant.
