Chef Amos Sion is known for his creative interpretations of classic Levantin dishes. He sources his ingredients locally from neighboring fields and fishermen, guaranteeing guests the freshest and most vibrant fare. His modern Israeli kitchen produces gorgeous colorful cuisine that’s layered in both flavor and texture. His wife, Debby Sion is a renowned Israeli sommelier and has hand-picked an award-winning list of local and foreign favorites. Chef Amos Sion began to cook at a very young age for his family. After serving in the special operations unit of the IDF, he studied gastronomy at the Tadmor School of Culinary Arts, during which time he also opened kiosks in area Farmer’s markets to supplement his income. He has apprenticed under the supervision of Israel’s most renowned culinary talents, among them Yankale Schein, Yonatan Roshfeld, Daniel Zach and Erez Komorovsky. He furthered his studies in Alsace Lorraine at the acclaimed restaurant Auberge de L’ill.
