Albert Adrià Acosta
Albert Adrià was born in Hospitalet on October 20, 1969.
In 1985, Albert left his studies and became part of the elBulli staff. At the end of 1997 and coinciding with the appearance of the book Los postres de El Bulli, he began the elBulli workshop, being the director, a position he would not leave until he left.
In 2006, the Inopia Classic Bar opened in Barcelona, considered one of the most innovative concepts and one of the pioneers in the “gastrobar” concept.
In January 2011 he opened 41º, a new concept that proposed establishing a dialogue between the world of cocktails and snacks. He also launches Tickets, which is based on a new vision of the world of tapas, in a fun and informal environment.
In 2013 he opened Pakta, a Nikkei restaurant born from Albert’s admiration for Japanese and Peruvian cuisine.
In September of the same year, Bodega 1900 was born with an updated vision around the vermouth tradition.
In that same month, Niño Viejo opens, a taqueria that pays homage to the most popular Mexican cuisine. It was followed in November of that same year by Hoja Santa, the Mexican gastronomic restaurant.
In February 2015 the creative alliance between Albert and Ferran Adrià and Le Cirque du Soleil in the Heart Ibiza project is announced.
In January 2017, Enigma opens, the last of the concepts that culminates the elBarri project in Barcelona, Albert’s most exquisite and sophisticated vision of a luxury gastronomic experience.
In 2018 he returns to the Café Royal in London to open a permanent establishment, Cakes & Bubbles. A new concept of pastry/sweet restaurant.
Since 2020 he has been collaborating on the conceptualization of the multi-space project in New York in association with José Andrés, Mercado Little Spain.
Currently Albert works full time at the Enigma restaurant and various R&D projects with food companies.
