Adrian Colameco
A native Floridian, Adrian Colameco joined The St. Regis Bal Harbour Resort in 2022 as Executive Chef. Bringing over a decade of elite culinary experience, Chef Colameco leads the resort’s exquisite culinary program spanning Atlantikós, The St. Regis Bar, La Gourmandise, and BH Burger Bar. Colameco additionally oversees the resort’s Banquet menu. With a demonstrated history of elevating culinary programs at luxury hotels, Colameco began his career training under Chef Allen Susser, a James Beard Award Winner for Best Chef, at Jade Mountain Resort in St. Lucia, West Indies. Following, Colameco moved to Hawaii to lead the culinary team at Grand Wailea Resort Maui before holding positions across the U.S. at Las Vegas’ famed Bellagio Resort and Casino, Boca Raton Resort & Club, and Casa Marina Resort in Key West, Florida.
Colameco grew up in Boca Raton and attended the Florida Culinary Institute, where he earned an associate’s degree in culinary arts. Prior to his experience with luxury hotels, Colameco served as Executive Chef at Oceans 234, a premier beach venue in Deerfield Beach, Florida and Chef de Cuisine at Roy’s, a fine dining restaurant in Boca Raton. In 2009, he founded his own company, Colameco’s Custom Catering, that provided innovative, sustainable cuisine to upscale events across Florida.
