Led in large part by our co-founder, Rosemary Diaz, we have compiled all of our freshest ideas in order to create the menu and ingredients at Xochimex, which has contributed greatly to our success. Rosemary, whose parents are Mexican and Cuban, has been enthralled with cooking for nearly her entire life. From putting in countless hours in the kitchen with her “Yaya,” to helping found the first Xochimex in 2009, creating delicious meals has always been Rosemary’s prime focus, and her restaurants have followed suit.

Fast forward to 2019, and we currently have seven locations around Miami-Dade county, with our sights set on several more restaurants in the near future. Xochimex continues to grow every day, and we hope you will visit us soon to enjoy our signature Xochi-fresh taste!

But what exactly is this “Xochi-fresh” taste that drives Xochimex? Well, put simply, there’s fresh, and then there’s Xochi-fresh. “Fresh” implies that your food is made on-site, without ever being frozen. At Xochimex, we add an extra level of freshness. Not only are many of our ingredients, such as our queso, tortillas, chips, and proteins, made in front of you, but they are also made as you order. You will never be served the last scoop of chicken from the bottom of a tray, which was cooked 45 minutes ago. What is more special than a made-to-order meal? Our food comes from the grill directly to your tray, ensuring that you experience every bit of our Xochi-fresh taste!
