Discover the art of sausage making with the award-winning team from Babe’s Meat & Counter, Miami’s beloved neighborhood butcher and sandwich shop celebrated for its house-made meats and craft-forward approach to butchery.
Led by Jason and Melanie Schoendorfer, recipients of the StarChefs Rising Stars Butcher Award and winners of Miami New Times’ Best Burger, this hands-on workshop will guide you through every step of the sausage-making process, from grinding and seasoning to casing and cooking.
You’ll pick up expert techniques and insider tips to achieve juicy, perfectly seasoned sausages every time. Once your creations are ready, sit down for a delicious lunch featuring the sausages you helped craft, paired with sides that showcase Babe’s signature style.
A flavor-packed, interactive experience for meat lovers and culinary adventurers alike, and a chance to learn from one of Miami’s most acclaimed butcher teams.

100% of net proceeds from the Festival benefit students of the Chaplin School of Hospitality & Tourism Management at Florida International University who assist Festival organizers in all aspects, including Festival planning, logistics and overall execution.
