Thomas StewartGianni's At The Villa
As the Executive Chef of Gianni’s at The Villa Casa Casuarina, Thomas Stewart brings years of culinary knowledge and experience to the new Italian Mediterranean restaurant located in the former Versace Mansion. Learning and working in a number of different locations across the country has given Chef Thomas the culinary skills that allow him to put his own touch on the dishes that will be served at the new restaurant on South Beach.
Growing up in the Atlanta suburbs, Chef Thomas learned to appreciate the fresh produce from local farmers in his neighborhood. His biggest inspiration has always been his mother. As a child, Chef Thomas would make her eggs for breakfast before she went to work to serve and protect as a police officer.
Chef Thomas started his career in the restaurant industry in Atlanta in 1998 and within two years he was working as a chef in a high-volume kitchen. He eventually moved to the U.S. Virgin Islands to be Chef de Partie of Havana Blue, before making his way to California as the Head Chef at Café Sevilla and eventually served as Executive Chef at Primitivo Wine Bistro in Los Angeles.
Utilizing techniques he learned during his culinary journey, Chef Thomas now brings his vast skills and experience to Gianni’s at The Villa with his own innovative and personal style of cooking. Seeing diners enjoy and appreciate his dishes brings him instant satisfaction and motivation to continue doing what he loves. When he is not cooking in the kitchen, Chef Thomas can be found surfing and skating or relaxing as a family man with his wife, daughter, and their cat and dog.
