Executive Chef of The Strand Bar & Grill at Carillon Miami Wellness Resort, Stephen Ullrich, combines a passion for fresh ingredients with his enthusiasm of Miami to provide guests with a memorable dining experience.

A Miami native, Ullrich’s extensive travels through Europe as a teenager, where fine dining experiences cemented his appetite for the culinary arts. A Boston College graduate, Ullrich moved back to Miami to begin his pursuit at Red Fish Grill. In 2011, Ullrich moved to New York and enrolled in the French Culinary Institute to pursue a Grand Diplome in Culinary Arts. While in school, he trained at notable restaurants, including Georges Mendes’ Mediterranean-inspired Aldea and Danny Meyer’s acclaimed Gramercy Tavern.

After graduating Ullrich worked at some of New York’s top restaurants, including Colicchio & Sons, Manzanilla, and was executive sous chef at Wolfgang Ban’s Seasonal when the restaurant was awarded a Michelin Star. Ullrich also spent time at L’Ambroisie, a three Michelin-starred restaurant in Paris where he refined his classic French technique.

In 2015, Ullrich’s culinary journey moved him back to Miami to oversee culinary operations at Tom Colicchio’s since-closed Beachcraft at the 1 Hotel South Beach. He brings a fresh take and seasoned portfolio to the kitchen at The Strand Bar & Grill opening November 2017. The new eatery will showcase a menu of new American fare, infused with innovative touches highlighting South Florida’s organic community.

Ullrich currently resides in Miami with his wife Rafaela and new baby, Saskia, and their four-legged friend, Fritz.

What is your ultimate comfort food?: Ultimate comfort food would have to be spaghetti served with clams, Calabrian chili, white wine, olive oil, parsley and garlic. No better post service snack known to a chef in my opinion. If you weren't a chef, what would you be?: I would be a landscape architect. I think the common ground would be the ability to be creative and create contrast. What three things are always in your pantry?: 1. Indian spice box. I love Indian food and the spice box is needed if you cook Indian food with any frequency It contains 7 spices: turmeric, mustard seeds, red chili powder, Garam Masala, coriander cumin powder and amchur. 2. Calabrian chili . I could put it in everything. I like spicy foods but Calabrian chili is spicy enough but also has some back notes that make it truly unique. 3. Tipo 00 flour. I love making pasta at home and you need this to make it truly great as is not a good substitute. If you could cook with anyone in the world, who would it be?: I would have to say British chef Philip Howard. I just love his food and feel we have similar cooking styles.
