Executive Chef Eric Vasta leads an exceptional gourmet team at the JW Marriott Marco Island. A true culinary artist, Chef Eric has spent almost twenty years cultivating memorable fine dining experiences.
Growing up in New Jersey and New York, Chef Eric developed a distinguished palate and passion for food at the early age of 13 years. By 15, Chef Eric had already enrolled in culinary courses to learn the art of cooking. Perfecting his talent at the prestigious New York Restaurant School, New York, Chef Eric completed a Culinary Arts and Restaurant Management Degree. One year later Eric was honoured with highest paid chef award of his graduating class.
Passion for Food
Chef Eric began his career in the New York City, in some of the city’s finest restaurants s. Here he honed his talent before moving into the hospitality sector with the opening of the Sofitel New York in 2000. In 2004, he joined New York Palace Hotel and then in 2006 further expanded his experience in the Four Seasons Hotel in Chicago. He was part of the reopening team of the Iconic Fontainebleau Hotel in Miami Beach in 2008 before relocating to Dubai as Executive Sous Chef at Madinat Jumeirah in 2011. Eric then joined the Jumeirah Creekside Dubai as Executive Chef, leading a team of 75. As Executive Chef at JW Marriott Marquis Dubai, Chef Eric manages a team of over 300 associates, over sees 14 restaurants and bars and steering large events and conferences in the UAE’s largest 5 star hotel. In 2015 he was awarded the Culinary of Excellence Africa and Middle East Executive Chef of the year. In 2017 Eric was appointed as the Executive Chef of the newly rebranded JW Marriott Marco Island where he oversees nine of the food and beverage outlets.
