Exquisito Chocolates

Carolina Quijano graduated with a master’s in psychology from Columbia University, but unique desserts have been a lifelong passion. She started creating ganache truffles after attending chocolate training classes. What started as a sweet treat to gift clients and co-workers soon turned into a serious endeavor to create inspired flavors. After working nearly 10 years as a management consultant, she discovered small batch chocolate in Paris while traveling on business. Upon returning, she realized her dream was to open a chocolaterie that offered that same artisanal taste. That winter she tried and perfected hundreds of recipes in an effort to replicate that Parisian experience with friends and family. This journey had her trying recipes every day until 3am for a year and studying chocolate theory and techniques while still working her corporate job at Madison Ave. Such dedication and appreciation for chocolate has earned her the nickname “Chocolate Empress”.

Exquisito Fine Chocolates opened in 2014 in Miami with the promise to make everything by hand. Craftmanship, dedication, and lots of energy fill our days. We don’t believe in shortcuts and that is reflected in our products. It takes us four days to make a single batch of chocolate from fresh roasted cocoa beans that properly balances all the delicate flavor profiles we believe chocolate should deliver.
